Why it matters

Molecular mixology, done well, gives you content that markets your event for months afterwards. Done badly, it's a smoky liquid that looks great in photos and tastes of dish-soap. The technique matters as much as the theatre.

The cost of getting this wrong

Smoke without substance: why most 'molecular' bartenders aren't.

Liquid nitrogen and a smoke gun don't make molecular mixology. The technique only works when the drink underneath the theatre is balanced, freshly built and pours at the right temperature. Most operators bolt theatrics onto bad cocktails, which is exactly why guests post one photo and then go back to the wine.

What happens if you ignore it

  • Liquid nitrogen burns from untrained operators (real and frequent in this category).
  • Frozen serves shatter the glass if pour temperatures aren't controlled.

Bespoke molecular menus, branded glassware, Molecubox gifting boxes and multi-station brand activations are quoted individually. Techniques we use, and what they're for

We work with eight signature techniques. Each one has a specific best-use case, and a specific failure mode.

  • Liquid nitrogen freezing, instant frozen daiquiris and ice-cream cocktails.
  • Smoking under cloche, whisky and mezcal-led serves, theatrical reveal.
  • Spherification, bursting cocktail 'caviar' garnishes.
  • Edible cocktail bubbles, sparkling gas spheres with cocktail vapour inside.
  • Carbonation, bespoke fizzy cocktails using N2O/CO2 charging.
  • Clarification, crystal-clear Bloody Marys, milk-washed daiquiris.

Brand activations and PR moments

For launches and brand events, we design 1–2 signature serves built around the product (colour, key ingredient, brand story). Output assets typically include a 4K vertical video of the serve, a photographed pour sequence, and a behind-the-bar reel, all delivered to your team within 72 hours.

Weddings

A single signature molecular serve for the drinks reception is enough, the couple's cocktail, theatrically served, photographed once and then a classic bar runs the rest of the night. This is dramatically more cost-effective than running molecular service throughout.

Safety, licensing and venue acceptance

Liquid nitrogen requires specialist storage, transport and handling. We supply COSHH data sheets, risk assessments and method statements to your venue automatically. Most modern venues accept molecular setups; older listed properties occasionally need pre-approval, we handle the conversation directly with their events team.

Residential vs commercial

Residential molecular setups (private parties, milestone birthdays) lean on smoking serves and nitro daiquiris, high-drama, low-equipment, perfect for home settings. Commercial activations (brand launches, awards nights) use the full toolkit including spherification stations and multi-serve theatre routines.

Molecular mixology is priced by serve complexity, not headcount. A single signature serve for 100 guests sits around £950–£1,400 all-in. A two-serve brand activation with 300 guests, photographer brief and content delivery runs £2,400–£3,800. We always quote flat and itemised.

Is molecular mixology safe?

When delivered by trained operators, yes. We hold cryogenic handling certifications, file COSHH paperwork with venues, and never serve a frozen cocktail until it's pour-safe. Untrained operators are where the risk sits.

How much does molecular mixology cost?

A single signature molecular serve for up to 100 guests typically runs £950–£1,400 including specialist team, equipment and stock. Full brand activations with multiple serves and content delivery range from £2,400 upward.

Do you handle the liquid nitrogen safely?

Yes, we transport and store liquid nitrogen in compliant dewars, our operators are certified, and we always brief venue staff on safe distance and ventilation before service.

Will my venue accept molecular setups?

The vast majority do, we supply your venue with risk assessments, method statements and certification automatically. We'll have the conversation directly with the venue if needed.

Can the cocktails be branded for our company?

Absolutely. Brand-coloured serves, custom glassware, garnishes shaped or coloured to match your product, and bespoke menus printed in-house all included for corporate clients.

Is it just for show, or do the drinks taste good?

Both. Molecular techniques are tools to enhance flavour (clarification, fat-washing, aeration) and visual impact. We never sacrifice taste for theatre, guests should finish the cocktail and want a second.

How long does a molecular serve take?

Most signature serves take 60–90 seconds per drink with the theatre element. For events over 80 guests we run a separate molecular station alongside the main bar to prevent queues.

Do you provide content (photos / video) of the serves?

We coordinate with your photographer/videographer to ensure the technique is captured. If you don't have one, we can recommend regional content partners we work with regularly.

What if it's an outdoor event?

Most techniques work outdoors with proper wind shielding for the smoking station and a covered prep area for the nitrogen. We've delivered molecular service at summer marquee weddings across the North West.

Can you combine molecular mixology with a cocktail masterclass?

Yes, our most popular hybrid format. Guests learn classic cocktail technique, then watch (and try) two molecular serves at the end. Perfect for hen parties and corporate team days.

The small print

Terms & conditions

These terms and conditions apply to all contracts for the provision of services to the exclusion of any other terms. Booking confirmations made verbally or in writing are subject to these terms. By purchasing a service from Hire the Barman, you, as the client, agree to these terms of sale. These terms do not replace or affect your statutory rights.

Bookings

All quotations (verbal or written) are valid for seven days from the date of enquiry. Hire the Barman cannot guarantee the date will remain available after these seven days. To confirm and hold a booking, the client must provide a 50% non-refundable deposit by electronic transfer or debit/credit card. We do not accept payment by cheque. The remaining balance is due 7 days before the event. All monies are requested by electronic invoice.

Cancellations

In the event of a cancellation, Hire the Barman requires notice in writing 14 days before the date of the event. Failure to do so will result in full payment being charged. Booking deposits are non-transferable and non-refundable unless otherwise agreed in writing prior to booking.

Event changes

Should you wish to make significant changes to your event, Hire the Barman reserves the right to amend the rates and facilities offered accordingly.

Licensing

Hire the Barman does not provide a paid bar service and therefore has no involvement in any licensing matters and is not responsible for any breaches of licence.

Access

Where parking is required by Hire the Barman, adequate arrangements must be made by the client by prior arrangement; vehicle registrations will be provided. Where Hire the Barman is providing cocktail ingredients and glassware, adequate loading facilities must be provided. Hire the Barman will not be held responsible for difficulties that result in delays to service.

Flair

Hire the Barman will not be held responsible for 'lack of flair' if the environment provided is unsuitable or the bartender is deemed too busy, in line with our recommendation of one bartender per forty guests.

Rates

Rates and invoices are subject to change, without notice, dependent on the client's requirements, additional hours and stock. Additional hours requested by the client by negotiation with the bartender at the time of the event will be charged at the full hourly rate.

Late payments

Full payment of invoice is due to Hire the Barman within 30 days. Any outstanding payments after this time will be passed to a collection agency to recover on behalf of Hire the Barman. Any associated costs, including interest, legal and court fees, will be added to the outstanding balance and passed to the client for payment.

Insurance

Insurance is provided via Commercial Express. Public Liability: £5,000,000. Employers Liability: £10,000,000.

Unruly behaviour

The client is responsible for the behaviour and conduct of their guests. Hire the Barman will not tolerate verbally or physically abusive behaviour towards any member of staff or individual. The client is responsible for damage to, or loss of, any equipment.

Additional

Where Hire the Barman is unable to provide services as agreed due to circumstances outside its control (weather, transport problems and similar), it will not be held liable for any loss, cancellation or delay. Hire the Barman does not accept responsibility for the overall success of an event. These terms are deemed accepted by payment of invoice and are subject to change at the discretion of Hire the Barman in part or in whole.
